RECIPES

Cooking has long been a tradition of South Louisianans and an integral part of our heritage. Creole cooking is influenced principally by the French and the Spanish, each offering their own talents and knowledge to develop a delightful cuisine treasured by all who indulge themselves with these dishes. Almost all cajun recipes, as you will see, call for the "trinity". This includes onions, celery, and green bell pepper and provide delightful flavors to cajun dishes.

One of the delicacies unique to South Louisiana is the crawfish. There are many fantastic dishes which can be prepared from these tasty crustaceans. Any crawfish left over from your boil can be peeled, and the tails rinsed and frozen so your family and friends can enjoy any of the following authentic, delicious cajun dishes.
