Crawfish Pasta

 

1 stick butter
1 pound Louisiana crawfish tails
1 pint half and half
1 bunch green onions (chopped)
5 cloves garlic, chopped
1/2 cup green onion tops, chopped
Cajun seasoning or salt and fresh ground pepper, to taste
1 pound cooked pasta, preferably rotini

Melt butter in a large skillet. Sauté onion and garlic until vegetables begin to wilt. Add half and half and cajun seasoning or salt and pepper to taste.

Cook 5-10 minutes, until the sauce thickens. Add pasta. Toss well. Stir thoroughly over very low heat for 10 minutes. Serve immediately.

Yield: 5-6 servings
