HOW
TO PREPARE
Once our
select, Louisiana crawfish are delivered to your door, you are ready
to begin the process of boiling and enjoying one of the finest delicacies
in the world.
Next to
eating our wonderful crawfish, the next best best part is the preparation.
This offers a time for the guys to show off their cooking skills and
talk about the sports games this weekend, the ladies can sit around,
talk, and relax, and the children can play in the yard and even help
out with the cooking.

The first
step to a wonderful crawfish boil is to gather your family, friends,
coworkers, neighbors, and anyone else who you want to "pass a good
time" with. Once they arrive, start the boil by pouring yourself
and your guests their favorite ice-cold beverage. The crawfish should
then be removed from the packaging and rinsed. There is no need to purge
our crawfish, as prior to shipping, we "bathe" them in our
continuously-filtered purging system.
Rinsing

The crawfish
should be placed in a No. 5 washtub and filled with water until the
crawfish are barely covered. Stir a couples of times to permit any dead
crawfish to float up to the top of the water. These should be discarded.
The crawfish should be allowed to set in the water for several minutes
and then empty the water from the tub. Note: It is common to have a
few dead crawfish within a sack-this is not attributed to shipping.
Ingredients

Almost
anything can be added to the pot during the boil. A favorite in Louisiana
is to throw in lagniappe (something extra) into the seasoned, boiling
water.
Common
ingredients include:
|
Potatoes
(preferably small, red potatoes) |
|
Corn
on the cob |
|
Whole
onions |
|
Sausage |
|
Mushrooms |
|
Celery |
|
Lemons
(halved) |
|
Garlic
(whole heads) |
|
Whole
artichokes |
These are
just a few suggestions, but keep in mind that just about any vegetable
can added to the boil and absorb all of the wonderful flavors from the
boil, as well as contributing their own flavors to the crawfish.
Now that
you've completed the necessary preparations, you are ready to begin
the boil.
