ENJOY!!!!

Throw ‘dem steaming crawfish on a picnic table covered with newspaper.
Quickly grab the biggest ones you see and put them in front of you. (Don’t share this step with your guests!)
Make sure that the tail of the crawfish is not straight. A straight tail may indicate that the crawfish was dead before boiling and may not be good. Discard these.
Hold the crawfish in one hand and grab a claw, pulling it until it snaps off.
Repeat with the other claw.
Holding the body in one hand, twist off the tail with the other.
Peel away the first few rings of the tail shell.
Dip the tail meat in any of our special dipping sauces.
Pinch the tail at the lower end using your thumb and forefinger. Place the meat between your teeth, pinch and pull.
Now your ready to “suck ‘da head”. Using your two forefingers, separate the hard shell from the lower part of the head.
You can either suck the head or scoop out the yellow fat from inside the head and indulge yourself. This is the best part of the crawfish.
Grab your favorite ice-cold beverage, take a sip, throw away the remainders, and start all over.

When your hands get tired, take a break and enjoy the “lagniappe” which was added to the boil. The corn, onions, sausage, potatoes, celery, mushrooms. Mmmmm, Mmmm……TONNAIRE, AMIS MAIS ÇA C'EST BON, OUI.

When peeling any leftover crawfish tails for use in any of our delicious recipes, reserve the fat, as it is often used in these delightful dishes, adding a wonderful flavor. If freezing the tails, rinse the fat off prior to freezing.

Different people have different tastes. If you are sensitive to spicy foods or shellfish, don’t let that stop you. Just make sure you have plenty of ice-cold beverages on hand.

Make sure to discard any crawfish with straight tails. These were probably dead prior to boiling and could have gone bad.
