Grouper Parmesan

1/2 cup olive oil
1 package of dry Good Seasons Italian dressing
4 fish filets (4-6 ounces each, white fish such as grouper, mahi, snapper)
flour to coat fish
2 tablespoons olive oil
1 cup Italian bread crumbs
1-1/2 cups fresh grated parmesan cheese
1 to 2 lemons
fresh parsley for garnish

Preheat oven to 425 deg F.

First, to make marinade: mix olive oil and package of dry Italian dressing together, place in a large plastic container or bag. Place fish in the marinade and chill at lease 1 hour, preferably overnight.

Mix cheese and bread crumbs and set aside.

Remove fish from marinade and coat with flour. Place olive oil in a large oven proof skillet over medium-high heat. Place coated filets in hot oil. Lightly brown both sides of the filets. On the top side of the browned filet, evenly top wit bread crumbs and cheese mixture. Spritz with lemon.

Transfer skillet to a 425 deg F oven and bake uncovered for 5 to 8 minutes, depending on the thickness of the filet. Remove from oven and spritz again with lemon and garnish with lemon wedge an fresh parsley.
